Cajun Shrimp and Rice

Ok, I’m from Minnesota. I did not grow up knowing what Cajun or Creole was. I do know lutefisk and it’s nasty. My dad works in the food industry, so we did at least get to try other food, but it was always prepackaged. I love jambalaya in a box. yum. This, however, I think turned out pretty legit. This should probably feed about four people. It fed us for dinner. Two people, and I had barely a half cup left over for lunch the next day. If you want to try anything on my blog, this would be what you should try. It has my quadruple stamp of approval =]

Cajun Rice and Shrimp

Original Recipe

Cajun Shrimp and Rice

1T EVOO

1 Jalepeno, seeded and diced

1/4 Bell pepper

1/2 onion

1 can diced tomatoes, 15oz

2T Cajun seasoning

2c uncooked brown rice

1.5lb Shrimp, peeled and deveined

1. Cook rice according to direrections, I use our rice cooker

2. Toss shrimp in 1T Cajun seasoning and set aside

3. If you like your tomatoes chunky, add 1T Cajun seasoning and set aside. If you don’t, Process them in a food processe first to get your desired amound of chunky and then add the seasoning

4. Heat 1T EVOO in saute pan and saute onions, bell pepper, and jalapeno until soft. Remove to a plate or dish

5. Saute shrimp until opaque on both sides and also set side

6. Once rice has cooked, put rice into the pan and mix with tomatoes and the onion and pepper mixture. Heat until warm and well combined

7. Top with shrimp however pretty you like and lightly sprinkle with shredded Italian cheese. Just add as much cheese as you like, I didn’t add a ton
