Mexican Chicken and Rice Casserole

Rice is one of the boys favorite things to eat. It must be a southern thing because it’s not my favorite unless it’s in a burrito from Chipotle or is extremely flavored. I found this cheddar, jalapeno, and chicken casserole recipe a while back and it just seemed like half a meal. Just chicken with cheese and hot peppers on top. I took it a step further and made it with rice on the bottom. In the future I will stir the shredded cheese into the rice instead of on top of it and still keep the cheese on top of the chicken but it was still pretty delicious. It wasn’t quite spicy enough for us so we topped ours with some jalapeno hot sauce so next time I will just add another jalapeno.

Mexican Chicken and Rice Casserole

2c Cooked rice

1/2c Sour cream

2t Cilantro

2t Cumin

1/2t Lime juice

1 Jalapeno pepper, diced

1c Shredded taco cheese

2 Chicken breasts

Green onions for garnish

1. Preheat oven to 350 degrees

2. Mix COOKED rice with sour cream, 1t cumin, 1t cilantro, lime juice, jalapeno, and half of the cheese. Spread into the bottom of a small, greased baking dish

3. Place chicken breasts on top of rice and sprinkle with remaining cumin, cilantro, and cheese. Top with green onions

4. Cover and bake until chicken is cooked through. Mine took about 50 minutes
