Mexican is kind of a go-to staple in our house. Don’t know what to eat? Tacos! Well this time I switched it up a little bit with some very colorful fajitas! I had some leftover mini sweet peppers and they were an awesome addition to our normal Mexican route. I do kind of just add stuff when I make fajitas so this isn’t totally exact as far as measurements go. Just a starting point.
1lb Steak, sliced thin
1/2 Onion, diced or sliced, whichever you prefer
3 Mini sweet peppers, diced or sliced
2 Jalapenos, diced and seeded
1T Minced Garlic
1t Chili powder
1T Lime juice
Shredded cheese, lettuce, sour cream, salsa, etc.
1. Heat EVOO in large skillet and add onions, sweet peppers, jalapenos, and garlic. Saute until onions and peppers are soft. Look how beautiful those look
2. Add steak, cumin, chili powder, and lime juice. Saute until steak is done to your liking and taste. Add more cumin and chili powder to taste. I start small so that I don’t make it too spicy.
3. Assemble your fajita!
