Greek Chicken

Now, I say a lot of my recipes are good. I really do. This one is so delicious I cannot wait to try it on the grill next time! I wish I had marinated it first as you could definitely taste the herbs very strongly at certain points when you bit into it, but it was delicious with the herby crust so I still would have sprinkled them on either way. I’m not sure exactly how much herbs I used but I did use equal parts of all three. I also served this with some Parmesan Garlic Orzo that was super delicious! This was my second attempt at using a meat thermometer and it failed. I got impatient waiting for it to heat up so I just cut it open with a knife and looked. No pink means it’s time to eat!

Greek Chicken and Parmesan Garlic Orzo

Original Recipe

Greek Chicken

4 Chicken breast tenderloins

1T Minced garlic

1/2T Rosemary

1/2T Oregano

1/2T Thyme

1T Lemon juice

1. Preheat oven to 350

2. Place chicken in oven safe dish and sprinkle with garlic, rosemary, thyme, and oregano. Sprinkle lemon juice evenly over the top

3. Bake until cooked thoroughly. Mine took about 30 minutes. I covered mine at first and it was taking too long so I uncovered it and it cooked real quick so watch your cooking time.

Yumm, look at that herb crust!
