Chicken Parmesan Pasta


This is one of my favorite one pot meals. It is super delicious and quick. The recipe calls for cooked chicken so it is great to use up a leftover rotisserie. I didn’t have that so I just cubed and cooked some chicken first and put it aside.


Original Recipe

Chicken Parmesan Pasta

1 28oz Can crushed tomatoes

2T Minced garlic

1/4t Dried oregano

1/8t Red pepper flakes

2c Water

1c Chicken broth

12oz Pasta, I used penne

1c Parmesan cheese

1lb Chicken breasts, cooked

4oz Mozzarella, for topping. I used sliced but you can use shredded

Italian herbs for topping

1. Bring tomatoes, oregano, red pepper flakes, water, and chicken broth to a boil. Add pasta and cook until soft.

2. Add parmesan cheese and chicken. Stir so that parmesan melts and chicken warms up.

3. Sprinkle with mozzarella cheese and let melt. Then serve and enjoy! I served this with Cheesy Herb Bread
